Ingredients:
- Cooking oil for pan
- 1/2 onion, diced
- 1/2 packet Meetballs (plant-based)
- 3 tbsp Tikka Masala paste
- 1/2 cup coconut cream
- 1/2 cup water/ stock
- 1 cup veggies of choice (carrot & baby spinach)
- 1 cup Brown Basmati Rice
- Bhuja Cracker Mix
Method:
Heat oil and cook onion until fragrant, add meatballs and cook until slightly brown. Add curry paste followed by coconut cream and water/ stock. Simmer until sauce is thickened. Boil water and cook Brown Basmati Rice. Garnish with Bhuja Cracker Mix for added crunch and spiciness.
